Beef tallow and suet both come from cattle but differ in several important ways:
Source: Tallow is rendered fat from around the kidneys, loins, and hardback of the cow, while suet specifically comes from the fatty tissue surrounding the kidneys and loins.
Processing: Tallow has been rendered (heated and filtered) to remove impurities and connective tissues, giving it a smooth, firm consistency. Suet is less processed, retaining some of its native structure.
Texture: Tallow is firm and smooth at room temperature with a creamy appearance. Suet has a more crumbly, granular texture and typically requires processing before use in most applications.
Properties: Tallow has a higher melting point and greater stability, making it excellent for soap making and projects requiring structural integrity. Suet's softer composition makes it particularly suitable for moisturizing skincare formulations.
Scent: Tallow typically has a more noticeable natural aroma (3/5 strength) compared to suet's milder scent (1/5 strength), which can be an important consideration depending on your project.
Both materials are valuable for external applications like soap making, skincare products, and candle crafting, but their different properties make each one better suited for specific uses.
Everyone's snout is different, so it's a little bit of hearsay. However, on a scale of 1-10, we are comfortable suggesting that the scent of rendered tallow sits around a 7.5.
With suet, we are comfortable suggesting that the scent sits around a 2-3, out of 10.
If the "beefy" smell still bothers you, and tallow is a product you're completely set on using, you can add the tallow to a bowl (melted or not) with distilled water and table-sat, refrigerated for 24-72 hours. The water will separate from tallow.
IF YOU ARE PURCHASING TO APPLY DIRECTLY ON YOUR SKIN: It's very common for most people to purchase the tallow over suet when being used as a skin-application because of the cheaper price — very understandable. However, we cannot recommend enough that if you want to apply the tallow DIRECTLY to your skin, please select a suet option. While tallow technically doesn't have a "shelf-life" or "best by date", we recommend that when stored properly in a cool, dark place, our tallow remains stable for up to 1 year.
We have properly stored tallow from over 2 years ago that hasn't had a change in color, no visible mold, and no rancid scent. We have done this solely to try and personally indentify what the shelf-life of tallow may be.
Refrigeration can extend shelf life even further. Always check for any changes in appearance or smell before use.
